(A) This gin and tonic isn’t very strong, is it?
§ CORRETA porque a locução nominal THIS GIN AND TONIC (esse gin tônico) é o sujeito da oração e está no singular, e portanto, deve fazer concordância gramatical com verbo no singular (is).
§ (THIS GIN AND TONIC) requer um → SINGULAR VERB (is).
§ GIN AND TONIC - a cooling drink consisting of dry gin and quinine water flavored and garnished with lime or lemon peel - uma bebida refrescante composta por gin seco e água de quinina aromatizada e guarnecida com limão ou casca de limão. [Merriam-webster Dictionary]

§ A LOT OF (large amount) → é um quantificador usado para descrever QUANTIAS GRANDES (mas não especificadas) de PESSOAS ou COISAS. Literalmente A LOT OF quer dizer “GRANDE QUANTIDADE“

§ INCORRETA porque o sujeito da oração A COUPLE OF MY FRIENDS está no plural e sendo assim deve concordar gramaticalmente com PLURAL VERB (plan) e não com “plans” (na 3ª pessoa do singular).
§ Sentença corregida:
§ A couple of my friends plan to open a new restaurant. - Alguns amigos meus planejam abrir um novo restaurant.
§ A COUPLE OF, dependendo do contexto, pode ser:
§ (1) A COUPLE OF → equivalente a SOME (ALGUNS, ALGUMAS).
§ It will take a couple of days for the package to get there. - Levará alguns dias para o pacote chegar. [Cambridge Dictionary]

§ (2) A COUPLE OF → equivalente a TWO THINGS OR TWO PEOPLE OF THE SAME TYPE.
§ A couple of police officers were standing at the door. - Dois policiais estavam parados na porta. [Macmillan Dictionary]
§ Take a couple of aspirin – you’ll soon feel better. Tome DUAS aspirinas – você logo se sentirá melhor.
(D) Half of his students doesn’t understand a word he says.
§ INCORRETA porque na sentença, HALF funciona como um PRE-DETERMINANTE e neste caso não é seguido da preposição OF.
§ HALF é usado como PRÉ-DETERMINANTE quando seguido de A, THE, THIS, HIS (my, your, his, her, its, our, their).
§ DICA: Em inglês, para dizer algo como "metade dos meus amigos", "metade da população", "metade das revistas", etc., basta dizer "half my friends", "half the popular", "half the magazines".
§ Observe que em português usamos a preposição "DE" e em inglês não.
§ Outro detalhe, HALF exige o verbo auxiliar na 3ª PESSOA DO PLURAL, portanto o correto é “DON’T” e não “DOESN’T” (3ª pessoa do singular).
